THE WINE
The classic method brut sparkling wine from the Murgo winery is 100% Nerello Mascalese grapes grown in the vineyards owned by the winery. We are in Sicily and, more precisely, in the area of the Etna volcano at about 500 meters above sea level. The soil of volcanic origin is rich in sand and allows for the cultivation of grapes with a high level of acidity, which are perfect for producing great sparkling wines.
This sparkling wine from the Murgo winery has the distinction of being the first sparkling wine created with 100% Nerello Mascalese grapes.
THE WINEMAKING
The grapes are harvested manually in small plastic boxes when they have not reached full ripeness. Once in the cellar, the grapes are softly pressed; the must is cooled and left to decant in insulated tanks. Fermentation takes place in steel tanks at a controlled temperature of 14°C. The wine rests in steel for approximately 7/8 months before the second fermentation. Once bottled, the wine ages on the yeasts for at least two years.
THE TASTING
Straw yellow with a very fine and persistent perlage; the aroma is pleasantly fresh with intense floral notes where chamomile and broom prevail, which leave room for delicate sensations of hazelnut and bread crust. Fresh and fruity on the palate, well structured with a pleasant flavour. Long and persistent finish.
FOOD PAIRINGS
Excellent as an aperitif, this sparking wine is perfect throughout the meal if the menu is fish-based. Try it with raw fish and oysters.
