The Brut Millesimato of Ca ‘del Bosco winery
The Brut Millesimato of Ca’ del Bosco is a blend of Chardonnay, Pinot Bianco and Pinot Nero; grapes that grow in the heart of Franciacorta from vineyards that have an average age ranging between 24 and 34 years.
THE WINEMAKING
The harvest is strictly manual and takes place in the last decade of August. Each bunch is selected by expert eyes and hands and subjected to a particular washing system; three soaking tanks and a drying tunnel. After crushing in the absence of oxygen, all the musts of the base wines ferment in small oak barrels for 5 months; this phase is relatively short because the winery is after the maximum aromatic complexity without losing elegance.
The wine is then moved by fall into steel tanks where it is aged for about 7 months. Once the refinement is finished, starts the masterly creation of the cuvée. In the case of the Brut 2013, 28 base wines have been used used. The wine is then left to age in bottle on the lees for about 48 months.
The dégorgement, which is the disgorgement, and is needed to eliminate the deposit formed in the bottle during foaming, occurs in the absence of oxygen, using a system that is unique in the world, conceived and patented by Ca’ del Bosco. This avoids oxidative shocks and further addition of sulfites. Before being placed on the market, each bottle is uniquely marked to ensure traceability.
Tasting the wine of the winery
Bright straw yellow, the perlage is very fine and persistent. The aromas are very intense and elegant with notes of bread crust that blend well with hints of melted butter. Dry but very fresh and sapid on the palate.
