The Wine
The Cabernet of the Bervini winery is produced with Cabernet grapes grown in the vineyards owned by the winery and located in Sequals in the province of Pordenone, in the heart of the DOC Grave del Friuli. All the vineyards don’t use herbicides, chemical fertilizers and synthetic insecticides but only products the community regulation allows. The winery believes organic farming is the right choice to protect the environment and human health. For them, it is essential to work as nature commands.
This Cabernet is part of the “55” line, representing the business’s beginning. The Bervini winery was founded in 1955, willing to focus on the local vines much appreciated by the local community and now available to a broader public.
THE WINEMAKING
After harvesting, the selected grapes are taken to the cellar for winemaking. Fermentation on the skins occurs in steel tanks at a controlled temperature of 22/24°C and lasts about 8/10 days; following the pressing and refinement. The wine then ages in steel, and after blending and bottling, it rests for a few months in the cellar before being placed on the market.
THE TASTING
Red with violet reflections. The aroma is pleasantly intense, with herbaceous notes that intertwine with hints of wild berries. Winy on the palate, this Cabernet is soft and full-bodied with a light herbaceous undertone. Persistence is also good.
FOOD PAIRINGS
Excellent with meat in general and medium-hard cheeses but also with cold cuts.
