The Wine
The Cabernet of the Ronco del Gelso winery is a bland of Cabernet Franc and Carmenere grapes. The Carmenere vines are older while the Cabernet Franc vines are younger. The winery decided to call the wine only Cabernet because until recently the two varieties used to be confused in the vineyard.
THE WINEMAKING
After the strictly manual harvest, the selected grapes are brought to the cellar for winemaking. The grapes are destemmed and left to macerate for about 15 days. The fermentation is done in steel tanks with the use of selected yeasts, at a controlled temperature of 26° C. The wine is then racked into used large 25 hl oak barrels where it ages for about one year; after assembly and bottling, it rests a few more months in the cellar before being placed on the market.
THE TASTING
Light ruby red. The aroma is pleasant with fruity hints that mix with notes of freshly mown grass. Full-bodied on the palate, not too alcoholic with tannins that are barely perceptible. An easy-to-drink wine.
