The wine Cabernet Franc Carso DOC by the Castelvecchio winery
The Cabernet Franc of the Castelvecchio winery is born from 100% Cabernet Franc grapes grown in the heart of the DOC Carso, in the province of Gorizia.
THE WINEMAKING
After the harvest and the selection of the grapes, it is time for the winemaking at controlled temperature in steel tanks. The wine is then moved to French and Californian oak barrels where it ages for about 12 months. This is followed by a further period of aging which lasts about another 12 months in large French and Slovenian oak barrels. After assembly and bottling, the wine rests for about 6 months in the cellar before being placed on the market.
Tasting the Cabernet Franc Carso DOC by Castelvecchio
Ruby red with aristocratic, almost silky, hints. The aroma is fresh with pleasant herbaceous notes that go well with the spicy hints generated by the long passage in wood. Velvety, full-bodied with well-smoothed tannins. Excellent correspondence between the aromas and the taste. Persistent.
FOOD PAIRINGS
It goes well with roasted white meats and game. Must try with duck.
