The wine Ribolla Gialla Petruss by Ferruccio Sgubin
The Ribolla Gialla Petruss from the Ferruccio Sgobin winery comes from Ribolla Gialla grapes, cultivated in two distinct areas of the estate. The first vineyard, about 35 years old, is situated on soil known as flisch di Cormons, which features alternating layers of Eocene Marl and sandstone. The second vineyard is a few kilometres away, located on a Pleistocene hill and referred to as Flisch di Grivò.
The Petruss project includes reserve wines from the Sgubin winery and aims to enhance the terroir and the richness of nuances of the Collio Friulano.
The winery has been certified organic (BIO) since 2023, and it has practised sustainable cultivation in previous years, with a particular focus on the protection of bees.
THE WINEMAKING
About fifteen days before the harvest, some of the bunches on the plant get thinned to promote the development of aromatic compounds. The harvest is conducted entirely by hand when the grapes achieve the ideal balance of sugars and acidity. Once the grapes are in the cellar, the winemaking begins with skin maceration, followed by gentle pressing. The must ferments at a controlled temperature of 16°C in stainless steel tanks. The wine is then aged for 50% in steel “sur lies” and 50% in oak barrels of 500 liters. After blending and bottling, it rests in the cellar for a few additional months before being released to the market.
Tasting the wine by Ferruccio Sgubin winery
The wine displays a straw-yellow colour with golden reflections; its aroma is pleasantly fruity, featuring hints of banana complemented by notes of pineapple and mango, along with floral undertones dominated by white flowers. On the palate, it is well-structured, with a pleasant acidity that invites continued sipping. There is excellent harmony between the aromas and flavours, culminating in a long and persistent finish.
FOOD PAIRINGS
It complements fish, shellfish, and white meats; consider pairing it with tuna tartare.
THE WINERY
