THE WINE
The Cabernet Franc from the Zof farm comes from 100% Cabernet Franc grapes from the vineyards owned by the winery. We are in Corno di Rosazzo in the Colli Orientali del Friuli, a small area with a great wine tradition known worldwide. In Corno di Rosazzo, the climate, exposure, and the soil are fundamental factors for excellent wine production.
This international black grape variety originated in France in Bordeaux and then spread to Italy and the United States. The climate and terroirs of Friuli Venezia Giulia are particularly favorable to this variety from which great wines such as that of the Zof farm are born.
A family-run business for four generations with fifteen hectares of vineyards equally divided between white wines and red wines with native and non-native grapes. Zof has also boasted the collaboration of Donato Lanati for over ten years, the oenologist-scientist known throughout the wine world for his qualities and philosophy.
THE WINEMAKING
The harvest takes place between the end of September and the beginning of October. Once in the cellar, fermentation takes place in steel tanks at a controlled temperature of 25°C and continues until December following the harvest. The wine ages partly in oak barrels and partly in steel tanks for a period that varies depending on the vintage, and after bottling in July, it rests for another three months in the cellar before being released on the market.
THE TASTING
Intense red with elegant purple reflections; the aroma is pleasantly intense, with herbaceous notes that intertwine with hints of berries to finish with puffs of freshly cut hay. Good body on the palate with a perfect correspondence between aromas and flavor and good persistence
FOOD PAIRINGS
The Cabernet Franc by Zof winery goes well with red meats, game, and hard cheeses. Try it with pork shank.
