THE WINE
The Cabernet Sauvignon from the Alturis winery is produced with Cabernet Sauvignon grapes grown in the vineyards owned by the winery, which are between the plains and hills near Cividale del Friuli in Friuli Venezia Giulia. Like the Cabernet Franc, this is also a classic red wine that represents the winery that produces it.
THE WINEMAKING
The harvest of the grapes is strictly manual and takes place in September. The grapes are gently destemmed and pressed. The must is then left to ferment on the skins at a controlled temperature with frequent pumping over; this step allows the extraction of the colour and all the aromas from the grape. After racking, the wine ages in 500 liters tonneaux for a period that varies depending on the year of production. After bottling, the wine rests for a few months in the cellar before being placed on the market.
THE TASTING
Intense ruby with violet reflections. The aroma is pleasant, with hints of dark fruit such as plum and morello cherry, leaving room for floral hints of violet to close with black pepper and cocoa puffs. Fresh and balanced on the palate with elegant and well-integrated tannins. Good correspondence between aromas and flavour. Persistent.
FOOD PAIRINGS
Perfect with meat and medium-hard cheeses. Try it with mixed grilled meats and also with lamb chops.
