THE WINE
The Cabernet Sauvignon from the Le Due Torri winery is a red wine from pure Cabernet Sauvignon grapes grown in the vineyards owned by the winery. A very good wine that fully represents the qualities of the vine and the area of origin.
We are in Corno di Rosazzo, an area of Friuli in the heart of the DOC Friuli, particularly suited to cultivating vines. Here, the winemakers are of few words but very attached to their land and traditions.
Another watchword of the Le Due Torri winery is biodiversity; four hectares of natural forest embrace the vineyards, creating a unique microclimate.
THE WINEMAKING
The harvest at Le Due Torri is always manual; in this case, it takes place during the first ten days of October and once selected, the best grapes are taken to the cellar for winemaking.The grapes are then macerated for 30 days with daily manual pressing; then ferment in steel with the addition of selected yeasts. The refinement lasts about 20 months with weekly bâtonnages and takes place in 500-litre tonneaux of French oak. After blending and bottling, the wine rests in the cellar for a few more months before being placed on the market.
THE TASTING
Intense ruby red. The aroma is elegant with pleasant notes of red fruit where cherry and raspberry prevail, which leave room for spicy scents and vanilla hints, to close with light notes of mint and puffs of tobacco. Well structured on the palate, this Cabernet Sauvignon from the Le Due Torri winery is a full-bodied wine with present but well-smooth tannins. The softness that makes you want to drink is striking. Persistence is also excellent.

Excellent with red meat, game and hard cheeses. Try it with spicy dishes.
