THE WINE
The Cabernet Sauvignon of the Lis Neris winery comes from Cabernet Sauvignon grapes grown in the owned vineyards located between the municipalities of San Lorenzo, Corona and Romans in the province of Gorizia; we are on a plateau where the soil is mainly gravelly and calcareous, and these vines, in particular, have an average age of fifteen years. It is also essential to know that the Lis Neris winery raises its vineyards following integrated pest management protocol without using chemical herbicides.
THE WINEMAKING
The harvest is strictly manual and only occurs when the grapes are perfectly ripe. The harvested grapes are carefully selected, and only the best bunches are taken to the cellar for winemaking. The maceration takes place in stainless steel tanks. It lasts from eight to ten days, during which the winery proceeds regularly with the délestage technique that favours the colour’s extraction and diffusion. The wine then ages in large oak barrels of 500 and 225 litres and lasts about fifteen months. After bottling, the wine rests in the cellar for a few more months before being placed on the market.
THE TASTING
Intense ruby red. The aroma is elegant with pleasant hints of red fruits such as blackberry and cherry, which leave room for notes of fresh flowers to close with herbaceous puffs typical of this variety. This Lis Neris Cabernet Sauvignon is round and well-structured on the palate with a pleasant savoury note. The tannins are felt but well-smoothed. Good correspondence between aromas and flavour. Persistence is also good.
FOOD PAIRINGS
It goes well with medium-hard cheeses, savoury pies, vegetables and pasta dishes with meat sauces. Try it with an excellent barbecue.
