The Cabernet Sauvignon from the Tunella Winery
The Cabernet Sauvignon from the Tunella winery is a red wine that tells the story and tradition of the Hills of Eastern Friuli. This region, with its soils composed of marls and sandstones of Eocene origin, locally known as “ponca,” offers ideal conditions for the cultivation of fine grapes. With a mixed training system of single-cordon and French Guyot, and a planting density of 4,500 – 5,000 plants per hectare, Tunella’s Cabernet Sauvignon is an authentic expression of the Friulian territory.
The Tunella winery grows all its grapes according to the canons of integrated anti-parasitic control with low environmental impact.
The Winemaking
Harvesting occurs manually in the last week of September, when the grapes reach optimal sugar and phenolic ripeness. After destemming, the grapes are crushed, and the resulting must is left to macerate and ferment together with the skins. This phase is characterized by frequent pump-overs to extract color and noble tannins. Once the must is separated from the skins, the completion of alcoholic and malolactic fermentation is awaited, followed by the necessary racking to refine the wine. Subsequently, the wine matures slowly in the winery’s cellars before being bottled, with commercialization occurring one and a half years after the harvest.
Tasting the wine of the winery
Tunella’s Cabernet Sauvignon presents itself with an intense ruby red color, adorned with violet reflections. On the nose, it offers a fruity and slightly spicy bouquet, dominated by notes of fresh berries and plum, enriched by subtle hints of black pepper. On the palate, the wine is soft and elegant, with a solid structure and vibrant freshness, making it immediately enjoyable with a long and pleasantly persistent finish.
Food Pairings
This Cabernet Sauvignon is an ideal companion for meat dishes. It pairs beautifully with roasts, steaks, and lamb ribs, and also complements cold cuts. It is particularly appreciated with well-aged cheeses, which enhance the wine’s complexity and structure. Perfect for important dinners or moments of relaxation, this wine represents a complete and refined tasting experience. It is especially recommended with pork knuckle.
