The Tunella winery grows all its grapes according to the canons of integrated anti-parasitic control with low environmental impact.

The Winemaking

The winemaking of this Cabernet Franc begins with the manual harvesting of grapes, carried out in the last week of September. This timing ensures that the grapes are at the peak of their sugar and phenolic ripeness. After destemming, the grapes are pressed, and the resulting must is left to macerate and ferment together with the skins. This process is accompanied by frequent pump-overs, which facilitate the transfer of color and noble tannins to the must. Once the alcoholic and malolactic fermentations are complete, the wine is transferred to the underground cellar, where it matures slowly until bottling, about a year and a half after the harvest.

Tasting the wine of the winery

Visually, the Cabernet Franc presents itself with an intense and bright ruby red color. On the nose, it immediately impresses with its intensity and elegance, offering a bouquet of fruity and herbal notes. We find hints of sour cherry, blackberry, and blackcurrant, enriched by a characteristic herbal aroma. On the palate, the wine shows itself to be bold and well-structured. It is broad and pleasant, with a long finish that recalls and amplifies the olfactory sensations.

Food Pairings

This wine is the perfect accompaniment for dishes of red meats, game, and wild fowl. It also pairs beautifully with aged cheeses, creating a perfect union between the intense flavors of the wine and the complex flavors of the food.
