THE WINE
The Calabrone wine of the Bastianich winery is a blend of Refosco grapes for 70%, and Merlot, Pignolo, and Schioppettino for the remaining 30%. The vines are located on the hills of Manzano, Butrio and Cividale in Friuli Venezia Giulia. We are at about 150/200 meters above sea level, on a limestone-based soil rich in marl.
This is a unique wine and for this reason it is produced only in vintages in which the quality of the grapes is particularly favorable.
THE WINEMAKING
The harvest is strictly manual and takes place in mid-October.
Once in the cellar, all the Schioppettino bunches and 50% of the Refosco bunches are naturally dried for a period ranging from 4 to 6 weeks. The rest of the grapes, are selected on sorting benches and then de-stemmed, crushed and transferred in steel tanks for the alcoholic fermentation, at a controlled temperature of 25 / 27 degreesAfter racking, the wine is decanted for 48 hours before being placed in new oak barriques where it refines for at least 24 months.
The dried bunches are manually de-stemmed. Follows the maceration and fermentation which take place in open tonneaux. Fulling is done by hand, in order to maintain the most delicate extraction possible. The use of a vertical wooden press extracts the noblest and sweetest tannins. After 24 months of aging in new French oak barrels, all the wines are blended and bottled.
Refinement in the bottle can last between 18 and 24 months depending on the characteristics of the vintage.
THE TASTING
Deep ruby red; the Calabrone wine has rich and intense aromas with pleasant hints of ripe red fruit that mix with notes of chocolate and coffee to finish with spicy scents.Structured and powerful on the palate but at the same time velvety and harmonious. A wine of great elegance.
FOOD PAIRINGS
Perfect with red meats and hard or blue cheeses. Also try it as a meditation wine in front of the fireplace!
