THE WINE
Jerman’s Capo Martino was born in 1991 to honour the company founder, who in the year 1881 moved from Slovenia to Villanova. It is bland of Ribolla Gialla, Friulano, Istrian Malvasia and Picolit grapes that grow in the owned vineyards located on the Capo Martino hill which was purchased by the family in 1991 and which gives its name to the wine. It is one of the company’s flagships and represents the dream and craftsmanship of the older generations.
THE WINEMAKING
The harvest is strictly manual and occurs in the first days of September, and only the selected grapes are taken to the cellar for winemaking.After a short maceration on the skins, the wine ferments at a controlled temperature in oak barrels; the refinement also takes place in the same oak barrels and lasts about ten months. After blending and bottling, the wine rests in the cellar for a long time and is released on the market two years after the harvest.
THE TASTING
Bright golden yellow. The aroma is intense and complex, with notes of ripe fruit such as apple and banana that alternate with hints of tropical fruit that leave room for suggestions of withered flowers and puffs of vanilla and hazelnut. Perfectly balanced on the palate, velvety and delicately aromatic. Persistence never ends.
FOOD PAIRINGS
Perfect with fish but also with shellfish and with eggs and savoury pies. Try it with chickpea puree and rosemary octopus.
