The wine Vitovska Carso DOC by the Castelvecchio winery
The Vitovska from the Castelvecchio winery is made with 100% Vitovska grapes; we are taking about an autochthonous grape variety typical of the Karst area.
THE WINEMAKING
After the manual harvest, only the selected grapes are brought to the cellar for winemaking. The bunches are softly pressed; fermentation takes place in steel at controlled temperature; the wine then ages, in steel, on the lees for a few months. After assembly and bottling, the wine rests for additional few months in the cellar before being placed on the market.
Tasting the Vitovska Carso DOC by Castelvecchio
Limpid straw yellow. The aroma is very delicate with evident hints of honey followed by aromatic notes of thyme and puffs of beeswax. Fresh and fragrant on the palate with a slight note of acidity. Excellent persistence.
FOOD PAIRINGS
Perfect as an aperitif, it goes well with fish. Must try with sushi.
