THE WINE
The Sauvignon from the Castelvecchio winery is made from grapes produced in the Gorizia region which is characterized by an arid and rocky soil with little layer of red earth rich in iron and limestone. The area is always ventilated and is influenced by the nearby sea.
THE WINEMAKING
After the manual harvest and the selection of the grapes, the grapes are softly pressed. Both wine making and subsequent aging take place in steel.
THE TASTING
Straw yellow with greenish highlights. The aromas are complex; pleasant vegetal scents (typical of the variety), such as tomato leaf are followed by citrus notes, mainly grapefruit that leaves room for light puffs of white peach. The palate recalls the olfactory notes, with a mineral finish typical of the karst terroir.
FOOD PAIRINGS
It goes well with fish starters, rich pasta dishes, grilled fish and fish soup. Must try with spicy cuisine like the Indian one.

The winery Castelvecchio is located just above Sagrado, where the Gorizia Karst offers unthinkable corners of nature and tranquility.
