THE WINE
The Malvasia from the Castelvecchio winery is produced with 100% Malvasia grapes. The climate characterized by the nearby sea and the type of soil from the Carso area give this Malvasia a very personal stamp.
THE WINEMAKING
After the harvest, only the selected grapes are brought to the cellar for winemaking. Starting with a soft pressing, followed by fermentation in steel tanks at controlled temperatures. The wine then ages for few months in steel. After assembly and bottling, the wine rests few months in the cellar before being placed on the market.
THE TASTING
Straw yellow with golden highlights due to aging in bottle. The aroma is delicate with hints of aromatic herbs that are well intertwined with notes of yellow fruits to close with pleasant mineral puffs. Fresh and lively on the palate, closing with a pleasant savory note and peppery hints.
FOOD PAIRINGS
Excellent with fish, vegetables and pasta dishes with light sauces. Must try with grilled fish.
