THE WINE
The Cava Conca del Riu Anoia from the Raventós i Blanc winery is a bland of 40% Xarel-lo grapes, 32% Macabeo and 28% Parellada; these are native Spanish vineyards owned by the winery. It is a zero-dosage sparkling wine, i.e. without added sugar, fresh, which perfectly reflects its country of origin.
THE WINEMAKING
The harvest is strictly manual and only occurs when the grapes are perfectly ripe. The three grape varieties are wine-made separately and later assembled to create the cuvée. Once in the cellar, the grapes are softly pressed and statically decanted at low temperatures. The must ferments in steel tanks at a controlled temperature. After blending, the wine is bottled for a second fermentation and left to refine on the yeasts for at least 18 months.
THE TASTING
Straw yellow with a fine and persistent perlage: the aroma is pleasant with fruity notes of pear and yellow grapefruit that mix with floral hints to finish with puffs of brioches and scents of hazelnut. Fresh and pleasantly savoury on the palate, this sparkling wine has an excellent correspondence between aromas and flavour with a long and creamy finish.
FOOD PAIRINGS
Perfect as an aperitif, it goes well with fish, raw fish and shellfish.
