The Champagne by Dom Pérignon winery
Champagne Dom Pérignon 2013 is a blend of Pinot Noir and Chardonnay. This prestigious Champagne, which reflects the rich history of Dom Pérignon, is produced only in exceptional years. The winery honours the Benedictine monk associated with the origins of Champagne itself.
Dom Pérignon is renowned as the most famous sparkling wine in the world, serving as a global symbol of luxury and French excellence.
THE WINEMAKING
The grape harvest is done exclusively by hand, usually at the end of September. Once in the cellar, the winemaking occurs in stainless steel. The expertly crafted cuvée is then bottled with yeast for a second fermentation and left to age in the cellar for seventy-two months.
Tasting this Dom Pérignon
This Dom Pérignon presents a bright straw-yellow colour with golden reflections. The aroma reveals a complex bouquet with hints of white flowers, followed by fruity notes of peach and citrus, along with accents of anise, freshly chopped mint, and finishing with spicy and toasted undertones. It is velvety and intense on the palate, showcasing a remarkable harmony between aromas and flavours. The finish is long, persistent, and pleasantly spicy.
FOOD PAIRINGS
The Champagne Dom Pérignon 2013 pairs beautifully with fish, including raw preparations, and shellfish. It’s also an excellent match for aged cheeses.
