THE WINE
The Champagne method sparkling wine Alta Langa extra brut of the Ettore Germano winery is produced with Pinot Noir and Chardonnay grapes grown in the winery vineyards located about 500 meters above sea level where the soil is mainly calcareous and stony.
THE WINEMAKING
The grape harvest is strictly manual and only the selected ones are brought to the cellar for winemaking. After soft pressing, alcoholic fermentation takes place in steel at low temperature. The wine is then left to rest on the yeasts until the spring following the harvest when the second fermentation in bottle begins with the addition of selected yeasts,. The wine then ages on the lees for at least 30 months. Follows the disgorgement of the bottles which are then filled with the same sparkling wine; no liqueur d’expedition is added.
THE TASTING
Intense straw yellow with a fine and persistent perlage. The aroma is elegant with hints of bread crust that alternate with notes of yeast and dried fruit, to close with light floral scents. Rich and creamy on the palate with a good aromatic persistence.
FOOD PAIRINGS
Perfect as an aperitif, it goes well with fish, even raw, and shellfish. Must try with eggs and truffles
