THE WINE
The Champagne Method Sparkling wine Zero Dosage Ribona of the Fontezoppa winery is produced with 100% Ribona grapes, an ancient vine, brought to the region by the Piceni Princes, which has found its natural habitat in a small area of the Macerata Hills which are caressed by the salty winds of the Adriatic.
THE WINEMAKING
The cultivation is strictly organic and no chemical weeding is carried out. The harvest is strictly manual. After the winemaking which takes place in steel, the wine re ferments in the bottle on the lees for at least 30 months.
THE TASTING
Bright straw yellow with a very fine, creamy and persistent perlage. The aroma is elegant with pleasant hints of yellow-fleshed fruit alternating with delicate floral hints. Very fresh on the palate, with a perfect correspondence between aromas and flavor, and a long and persistent finish.
FOOD PAIRINGS
Perfect as an aperitif, it goes very well with shellfish, oysters and seafood but also with raw fish and sushi. Must try with vegetable and spicy dishes.
