THE WINE
The Rosé Brut champagne from the Yannick Prevoteau winery is produced with a bland of wines: Chardonnay for 30%, Pinot Meunier for 35%, Pinot noir from Damery Les Lotonnières for 35%. It should be noted that 12% of the wines are wine-made in red.
We are located in Damery, in the Marne Valley department, in the heart of the Champagne region. The work on the ground and in the vineyard, combined with a production process that fully respects the environment, has allowed the winery to obtain HVE level 3 (High Environmental Value Vineyard) and VDC (Sustainable Viticulture in Champagne) certifications.
THE WINEMAKING
This rosé is produced with the HERITAGE civée line, adding 10 to 12% of natural red wine produced in the Champagne region. The selected red wine is made with grapes from old Pinot Noir vines located in Damery. The marriage with red wine allows subtle aromas of red fruits while maintaining freshness and tone. Once bottled, the wine rests on the lees for at least 24 months and after Dégorgement for at least 6 months.
THE TASTING
Pink with pleasant salmon shades; the perlage is fine, creamy and persistent. The aroma is elegant, with pleasant notes of red fruits that intersect well with floral hints of iris and citrus fruit; it closes with a slightly spicy touch of saffron. Fresh and creamy on the palate with a sustained acidity. The fruity and crunchy finish leaves a somewhat salty sensation. Excellent correspondence between aromas and flavour. Persistent and very elegant.
FOOD PAIRINGS
Perfect as an aperitif, especially when paired with cured meats such as raw ham, but also with fish. Try it with the fruit tart.
