The wine Collio Bianco from the Colle Duga winery
The Collio Bianco of the Colle Duga winery comes from a bland of Friulano, Malvasia, Chardonnay e Sauvignon grapes in percentage that varies depending on the vintage. All grapes grow in the vineyards owned by the winery. We are in the localities of Zegla and Novali in the municipality of Cormons in the heart of the Collio DOC area in Friuli Venezia Giulia. The microclimate and proximity to the sea make this area one of Friuli’s most suitable for growing vines. This part of the Friuli Venezia Giulia region is also famous for what the locals call “ponca”, or the soil rich in sandstone marl of Eocene origin.
THE WINEMAKING
The harvest is strictly manual and takes place in September. The selected grapes are brought to the cellar for winemaking which is separator for each grape variety. After soft pressing, the must obtained is coldly decanted. Part of the must ferments in French oak barrels, while the other part ferments in steel tanks at a controlled temperature. After refinement, the wines are assembled fir the blend, bottled, and left to rest for a few months in the cellar before being placed on the market.
Tasting the Collio Bianco
Straw yellow, the aroma is intense, with pleasant fruity hints alternating with floral notes to finish with hints of yeast. It is warm and well-structured on the palate. This Collio Bianco is full bodied but, at the same time, velvety wine. The correspondence between aromas and flavour is excellent. It is persistent.
FOOD PAIRINGS
It goes well with fish and vegetables but also with white meat. Try it with the classic grilled fish place.
