The Wine
Siet Vignis in the local language means 7 vineyards; the Chardonnay “Siet Vignis” from the Ronco del Gelso winery is so called because it is produced with grapes from 7 different vineyards which added together do not reach 3 hectares. It is a small cultivation that produces a great wine.
THE WINEMAKING
After the strictly manual harvest, the selected grapes are brought to the cellar for winemaking. The grapes are softly pressed and left to ferment in steel tanks with the use of selected yeasts, at a controlled temperature of 19 ° C. The wine is then racked into large 25 hl oak barrels where it ages for about one year on the lees; after assembly and bottling, it rests a few more months in the cellar before being placed on the market.
THE TASTING
Straw yellow tending to golden. The aroma is rich and intense with pleasant citrus notes that intertwine with hints of tropical fruit which in turn leave room for puffs of peanuts. Soft and fresh on the palate; it is a well-structured wine with an excellent correspondence between aromas and taste.
FOOD PAIRINGS
It goes well with fish and the white meats. Must try with the classic Italian bollito misto
