THE CHEESE
Deichkäse groß BIO cheese; in German the name “Deichkäse”, translates as “dam cheese”. The reason for this name is given by the fact that the dairy is located very close to the dams of the Frisian region; we are on the North Sea.
In the dairy, the aging cells are below these dams and the particular sea air and the unique microclimate allow each mold to mature and age perfectly.
The structure is compact and crumbly, with brackish aromas.
Food pairing
Perfect with spicy and full-bodied red wines but also with Weizen beer.
