THE CHEESE
The Timmy cheese is a camembert made from sheep milk, which is produced in Rotholz in Austria; it is obtained by working the slightly heated sheep milk by hand.
Maturation takes place in special rooms rich in noble rot. and it is thanks to this step that the cheese acquires its typical delicate mushroom aroma.
The cheese is then refined with black pepper ground in a mortar which gives it a further touch of character.
Food pairing
Perfect with sparkling wines but also to try with berries.
