THE WINE
The Chianti Classico Maggiolo from the Lamole di Lamole winery is so-called to remember the iris, a typical flower of the Lamole area that you find everywhere in the fields and which is at the peak of its splendour in May. Maggiolo is a soft and tasty wine whose Sangiovese, Cabernet Sauvignon, and Merlot grapes come from the estate vines located in Lamole, in the municipality of Greve in Chianti, at an altitude that varies between 420 and 650 meters above sea level.
THE WINEMAKING
The harvest takes place during the first three weeks of October. Once in the cellar, the Cabernet Sauvignon and the Merlot are wine made together, while the Sangiovese is wine made separately. Winemaking begins with destemming followed by pressing; the must ferments with the skins in steel tanks where it remains until the end of winter. The wine then ages for about a year and a half; the Sangiovese wine in 50 and 70 hl oak barrels, while the Merlot and the Cabernet Sauvignon wines in barriques. After blending and bottling, the wine rests in the cellar for a few more months before being placed on the market.
THE TASTING
Brilliant, intense ruby red; the aroma is elegant with pleasant floral notes of cyclamen and violet that leave room for sensations of red fruit such as blackberry and blueberry to close with hints of sweet spices and cocoa. Very fresh and soft on the palate; the tannin is present but well-smoothed. The finish is very long.
FOOD PAIRINGS
It goes very well with spices, hot peppers or aromatic herbs. For this reason, it’s perfect with all dishes from Eastern or South American cuisine but doesn’t even disdain an excellent barbecue!
