THE WINE
The “Nottefonda” (deep night in english) of the Rocca Sveva winery is a blend of Pinot Noir, Corvina and Merlot grown on the hills east of Verona in Veneto; in this area, you can find the most important regional DOC and DOCG, well-known at the worldwide level. In particular, the FAO (Food and Agriculture Organization of the United Nations) has recognized the vineyards of Soave as the first historical rural landscape in Italy, an agricultural heritage of global importance.
Rocca Sveva is a charming medieval village transformed into a winery of excellence. The wine label is Nottefonda because the colour of this wine is dark and deep as the night.
THE WINEMAKING
The grapes are left to over-ripen on the vine for about fifteen days. The harvest is strictly manual and the selected grapes are left to dry on racks for a short period before starting the winemaking. After pressing, fermentation takes place in steel at a controlled temperature. The wine ages in oak barrels for a period that varies depending on the vintage and, after assembly and bottling, rests for a few months in the cellar before being released onto the market.
THE TASTING
Intense, dark and deep ruby red; the aroma is pleasant with fruity hints of small black fruits that intertwine with notes of dog rose to close with spicy hints and puffs of rhubarb. Full-bodied and well-balanced on the palate with a good correspondence between aromas and flavour and a long and fruity finish.
FOOD PAIRINGS
The nottefonda from the Rocca Sveva winery is perfect with it is perfect with red meat and hard cheeses. Try it with baked pork.
