The wine Ciliegiolo by Soffio sulle Isole winery
The Ciliegiolo of the Soffio sulle Isole winery is produced with 100% Ciliegiolo grapes grown on the island of Vulcano, one of the seven islands that form the Aeolian archipelago in Sicily. Although the island is of volcanic origin, the vineyards are located in a very fertile territory in the “Piano” area, a real plain, 420 meters above sea level.
THE WINEMAKING
After the manual harvest which takes place in the first half of September, only the selected grapes are brought to the cellar for winemaking. The grapes are de-stemmed and softly pressed. A cold maceration of 24 hours follows in order to extract all the aromatic component of the grape. The wine refines in wood for a period that varies according to the vintage. After bottling, it rests in the cellar for a few months before being placed on the market.
Tasting the wine by Soffio sulle Isole
Intense ruby red with purple hues. The aroma is very pleasant with sweet fruity notes such as morello cherry, plum and berry jam that leave room for hints of underwood. Full-bodied and well balanced on the palate, with a good correspondence between aromas and flavor. Persistence is also good.
FOOD PAIRINGS
It goes well with red meats, hard cheeses and game. Must try with grilled meat.
