THE WINE
The Classic Method of the Ca’Duso winery comes from a blend of 85% Chardonnay grapes and 15% Pinot Noir, grown in the owned vineyards located in the municipality of Costabissara in the province of Vicenza. We are in a hilly area; the vineyards are located about 220 meters above sea level.
THE WINEMAKING
The harvest is strictly manual and occurs in the early morning hours when the temperatures are still cool. The grapes are collected in small crates and immediately taken to the cellar for winemaking. The bunches are pressed whole, without destemming, and only the first 50% of the must is used to produce this classic method. A slow cold decantation follows for 12 hours. The fermentation of the base wine takes place in stainless steel tanks at a controlled temperature of about 15°C. The wine then refines on its noble lees until the following spring, when it gets bottled with the yeasts for the second fermentation. The bottles then rest on the lees for 24 months before disgorgement.
THE TASTING
Straw yellow with greenish hues; the perlage is thin and resistant. The aroma is elegant, with pleasant citrus notes of cedar and grapefruit that leave room for hints of pineapple and honey candy to close with tips of toasted bread and puffs of miniature pastries. Fresh on the palate, this brut classic method from the Ca’Duso winery is well balanced with a long and persistent finish and a good correspondence between aromas and flavours.
FOOD PAIRINGS
Perfect as an aperitif, it goes well with fish and shellfish. Excellent throughout the meal with fish menus.
