THE WINE
The Pinot Noir of the Le Due Terre winery is produced with 100% Pinot Noir grapes grown on top of a hill in Prepotto, not far from the border with Slovenia.
THE WINEMAKING
The harvest is manual and only the selected grapes are brought to the cellar for winemaking. The fermentation that occurs spontaneously with only the use of indigenous yeasts, is in contact with the skins and lasts about 20 days. The wine then ages for 22 months in barrique. Follows the assembly and bottling.
THE TASTING
Bright ruby red. The aroma is elegant with pleasant notes of red fruit like currants that are well intertwined with aromatic hints of species to close with scents of sweet mint. Soft, fresh and well structured on the palate; the tannins are present but fine and well polished. Excellent persistence.
FOOD PAIRINGS
Perfect with red meats, game and hard cheeses. Must try with beef fillet with green pepper sauce.
