THE WINE
The red Sacrisassi from the Le Due Terre winery is produced with Refosco dal Peduncolo Rosso (40%) and Schioppettino (60%), two native grapes that grow on top of a hill in Prepotto, not far from the border with Slovenia.
THE WINEMAKING
The harvest is manual and only the selected grapes are brought to the cellar for winemaking. Fermentation takes place spontaneously in wood with only the use of indigenous yeasts. The wine then ages for 22 months in barrique. Follows the assembly and bottling.
THE TASTING
Bright ruby red. The aroma is elegant with pleasant notes of red fruit that are well intertwined with hints of aromatic herbs which in turn leave room for mineral notes, to close with pleasant scents of chocolate and leather. Soft and warm on the palate, with well-mixed and silky tannins. The correspondence between the aromas and taste is also excellent. Persistent and fresh with a pleasant spicy note
FOOD PAIRINGS
Perfect with red meat, game and hard cheeses. Must try with stewed meat but also with roasts.
