THE WINE
The Cabernet Franc of the Russiz Superiore winery, is produced with 100% Merlot grapes grown in Capriva del Friuli, on the hills of the DOC Collio at an altitude above sea level that varies between 80 and 200 meters where the soil is rich in marl and sandstones.
THE WINEMAKING
After manual harvesting, once in the cellar, the selected grapes are separated from the stalks and left to macerate in large steel vats for a variable period depending on the vintage. The wine obtained is then left to age for about 12 months in small oak barrels. After assembly and bottling, the wine rests in the cellar for a further 6 months.
THE TASTING
Dark and compact ruby red. The aroma is intense and elegant with pleasant notes of red fruits such as blackberry and black cherry, leaving room for vegetal notes of pepper. Rich and broad on the palate, fresh with a good correspondence between perfumes and taste. Excellent persistence.
FOOD PAIRINGS
It goes well with red and white meats, all types of game and hard cheeses. Must try with wild boar.
