THE WINE
The Cabernet Franc from the Crastin winery is made from 100% Cabernet Franc grapes grown on the Rottars hill in the DOC Collio denomination of the Friuli Venezia Giulia region. Here the marly and clayey soil is particularly suited for the cultivation of the vine.
THE WINEMAKING
The grapes grow in two distinct vines, with different exposures. This particularity gives the wine a perfect balance between freshness and structure.
The grapes are rigorously manually harvested, they are placed in boxes and immediately taken to the cellar for wine-making that starts with the buffing followed by the pressing. The must is then transferred to tanks for the first fermentation on the skins. During this phase, on a daily basis punching down is carried on, in order to extract all the flavors and aromas of the grape itself. After pressing, the wine is transferred to stainless steel tanks where it ages for about 8 months. Once bottled, the wine rests for another two months in the cellar before being placed on the market.
THE TASTING
Bright ruby red. The aroma is intense with fine herbaceous notes typical of these grape varieties. Pleasant on the palate with a perfect correspondence between aromas and flavors. Excellent persistence.
FOOD PAIRINGS
It goes well with red meats, hard cheeses and game. Must try with braised beef.
