THE WINE
The Rosso DOC from the Picech winery is a blend of Cabernet Franc, Cabernet Sauvignon and Merlot grapes grown on the Pradis hills between Cormons and Gorizia, not far from the border with Slovenia. The bland grapes never overpower each other but find the perfect balance. The winery produces 5,500 bottles per year.
The wording “Le Vigne del Ribel” on all the labels recalls Roberto’s father, the winery’s current owner. This man did not compromise and made his wines known and appreciated by the majority. A figure well depicted by the hedgehog, which has become the winery’s symbol.
THE WINEMAKING
The harvest, which takes place between the end of September and the beginning of October, is manual and only the selected grapes are taken to the cellar for winemaking. Once in the cellar, the grapes are destemmed and left to macerate for twenty-five days with repeated daily pumping over. The wine then ages for around eighteen months, partly in steel and partly in large oak barrels. After blending and bottling, the wine rests for a few more months in the cellar before being released on the market.
THE TASTING
Brilliant ruby red. The aroma is pleasant, with fruity notes of red fruits such as blackcurrants and berries that leave room for hints of cassis. It is harmonious well structured on the palate with a lovely savoury note. The tannins of this Rosso from the Picech winery are still a bit rough because they are young. Excellent persistence
FOOD PAIRINGS
Excellent with red meats and hard cheeses. Try it with grilled beef steak.
