The Colomba (traditional Italian cake, usually eaten at Easter) Pineapple, Apricot and Pistachio is a handmade cake stuffed with pineapple and apricot candies and topped with a Sicilian pistachio glaze and granulated sugar.

It is a cake that combines the fruity flavor of pineapple and apricots with the sweet, enveloping taste of pistachio glaze.
