THE WINE

The owner of the winery, Claudine, Luc Tisserand and one of his daughters, Loren cultivate their vineyard, which extends for just over 11 hectares and where we can find, in addition to the Chardonnay, Gamay and Pinot Noir vines, an old variety called Tressallier and which grows only in the Saint-Pourçain appellation.
THE WINEMAKING
All the vineyards are cultivated with biodynamics to respect biodiversity better. Even during winemaking, human intervention is minimal. Fermentation and refinement take place with the sole use of indigenous yeasts. The cellar is vigilant even with the help of sulfites which are kept to a minimum. The goal is to promote the most natural winemaking possible.
THE TASTING
This cuvée comes from a blend of Tressalier (60%) and Chardonnay (40%) grapes. Pale straw yellow. The aroma develops nice notes of white fruits with a slightly buttery side. Fresh, aromatic on the palate; broad, with spicy notes and a nice bitter finish.
FOOD PAIRINGS
Perfect as an aperitif, it goes well with fish and medium-hard cheeses.
