THE WINE
The Aurora cuvée classic method sparkling wine from the Banfi winery is a blend of 30% Chardonnay grapes and 70% Pinot Noir grown in the vineyard owned by the winery. We are in one of the most prestigious wineries in Italy with estates in both Tuscany and Piedmont. Banfi is one of the seven wineries that in 1990 began the “Classic Method Sparkling Wine Project in Piedmont”, a project which in 2008 obtained the “Alta Langa DOCG” denomination.
The first Cuvée Aurora dates back to 1997, even before the creation of the “DOCG Alta Langa” and since then it has continued the tradition of great Piedmontese sparkling wines.
THE WINEMAKING
The harvest is strictly manual and the grapes are collected in boxes. Once in the cellar, the winemaking in white begins with destemming and soft pressing. Fermentation takes place in steel tanks at a controlled temperature of 13-14°C. In the spring following the harvest, the wine is assembled, bottled with the yeasts for secondary fermentation, and left to rest for more than 30 months. After disgorgement, the sparkling wine rests for a few more months before being placed on the market.
THE TASTING
Straw yellow with a fine and persistent perlage; the aroma is intense and fragrant with pleasant notes of candied citron that leave room for hints of toasted hazelnut to finish with puffs of aromatic herbs. Fresh and savory on the palate, perfectly balanced with a pleasant correspondence between aromas and flavor and excellent minerality. The finish is long and persistent.
FOOD PAIRINGS
This Cuvée Aurora Extra Brut from the Banfi winery is perfect as an aperitif, it goes well with fish and shellfish, even raw. Try it with oysters.
