THE WINE
The Classic Method Cuvée Brut sparkling wine from the Piè di Mont winery blends 60% Chardonnay, 20% Pinot Noir and the remaining 20% Ribolla Gialla. The vineyard, located in Piedimonte in the municipality of Gorizia, grows on marly and shallow soil 100 meters above sea level.
Located at the foot of Mount Calvario, with a Southeast orientation, the vineyard enjoys a wide temperature range thanks to the sun, which sets behind the mountain in the early hours of the afternoon. This temperature difference helps give the sparkling wine a more intense character and well-balanced acidity.
THE WINEMAKING
The winemaking process of our Classic Method Cuvée Brut sparkling wine is a testament to our commitment to quality. The harvest begins in mid-September and is a labour of love, carried out entirely by hand using crates. This ensures the integrity and optimal temperature of the bunches are preserved. The grapes are then vinified separately in steel tanks through gentle pressing. A small portion of the Chardonnay is aged in new 225-litre barriques, adding a unique touch to the blend. The cuvée is assembled in January, and fermentation takes place in May. The wine then rests on the yeasts for a minimum of 33 months, adding depth and complexity. After disgorgement, the 0.75-litre bottles undergo further refinement in the bottle for approximately seven months, while the 1.5-litre ones require a year.
THE TASTING
When it comes to the tasting experience, our Classic Method Cuvée Brut sparkling wine does not disappoint. It presents a beautiful straw yellow colour with a persistent perlage. On the nose, it offers a delightful bouquet of flowers, exotic fruits, and citrus, which gradually evolves into more complex aromas of burrata and white chocolate. On the palate, it is a velvety and delicate delight. The wine’s long-limbed and savoury taste is free of yeast notes, thanks to the freshness imparted by the Ribolla Gialla. The touch of Chardonnay adds an elegant and sinuous character, while the Pinot Noir contributes to the structure, making it an ideal companion for a meal.

THE WINERY
The winery was founded in 1983 by Paolo Rizzi but at that time he did not produce wine but planted the vine cuttings by hand on the steep hills of this area of the Collio Friulano. This activity is still in existence but with the arrival of his son Roman in the company, he began an innovative path focused on the production of classic method sparkling wines, respecting biodiversity and the territory…. keep ready
