The Wine
The De Vite from the Hofstatter winery is a blend of Pinot Bianco, Müller Thurgau, Sauvignon, and Riesling grapes grown and selected in the vineyards owned by the winery. Thanks to the microclimate, the ideal position, this area is perfect for growing vines. The four wines part of this blend, fully represent the essence of the white grape varieties grown in Alto Adige.
THE WINEMAKING
After manual harvesting, the selected grapes are taken to the cellar for winemaking. The grapes are destemmed softly pressed, and the must is left to settle for the whole night. Fermentation takes place at a controlled temperature. Regarding refinement, the wine rests for few months in steel on fine yeasts. After blending and bottling, the wine rests in the cellar for a few more months before being released onto the market.
THE TASTING
Straw yellow with light greenish reflections. The aroma is pleasant with notes of apples that alternate with hints of lemon leaf to close with puffs of vanilla. Fresh on the palate, this wine has a nice acidic note that makes you want to keep drinking; also the correspondence between the aromas and the flavor is excellent. The finish is long and persistent.
FOOD PAIRINGS
Perfect as an aperitif, it goes well with fish and semi hard cheeses. To try with sushi.
