THE WINE
The Trento DOC Der Blauwal extra brut reserve from the Cesconi winery is 100% Chardonnay grapes. All the grapes are grown in the winery’s vineyards, located on the hill of Pressano, a small hamlet in Trentino. All vineyards are over forty-five years old.
THE WINEMAKING
The harvest is strictly manual, and only the selected grapes are taken to the cellar for winemaking. After soft pressing, the wine ferments in steel tanks; the still wine then ages in used oak barriques. The wine is then bottled for fermentation in the bottle and rests on the yeasts for at least eighty-four months. In order to maintain the complexity of this sparkling wine, the final top-up after disgorging is done with the exact base wine (3 g/l).
THE TASTING
Intense yellow with golden reflections and a very fine and persistent perlage; the aroma is wonderful, with pleasant floral notes that alternate with hints of candied citron and quince, which leaves room for puffs of spiced bread crust. It is very soft on the palate, and the balance between freshness and flavor is perfect. Persistence is also excellent.
FOOD PAIRINGS
Excellent as an aperitif, it goes well with fish dishes, even raw ones. It is perfect throughout the meal if the menu is fish-based.
