THE WINE
The Dolcetto d’Alba Cescu from the Angelo Negro winery is produced with 100% Dolcetto grapes grown in the vineyards owned by the winery that are located on the hills of the Langhe and Roero. We are in the province of Cuneo in Piedmont, in a land particularly suited to the cultivation of wine. We are at an altitude ranging from 200 to 350 meters above sea level; ere the soil is clayey, calcareous and rich in gray marl.
THE WINEMAKING
The grape harvest, which is strictly manual, takes place at the end of September. The selected grapes are placed in boxes of about 20 kg and taken to the cellar. The winemaking takes place in steel at a controlled temperature. The wine then ages in steel until the following spring. After blending and bottling, the bottles rest for a few months in the cellar before being placed on the market.
THE TASTING
Intense ruby red with brilliant violet reflections, the aroma is fresh with pleasant fruity hints of red fruits such as blackberry and raspberry, which leave room for the characteristic puffs of dried plum. It is aromatic and full-bodied on the palate, pleasantly tannic, with an excellent correspondence between aromas and flavour and good persistence.
FOOD PAIRINGS
It goes well with white and red Carini and medium-hard cheeses; try it with a plate of mixed-quality cold cuts.
