THE WINE
The Dom Jurosa brut from the Lis Neris winery was produced for the first time in 2008 and quickly established itself in the panorama of classic method sparkling wines. It is produced with Chardonnay grapes grown in the owned vineyards located in San Lorenzo Isontino in the province of Gorizia; we are on a plateau sixty meters above sea level where the soil is mainly gravelly and calcareous, and these vines, in particular, have an average age of over thirty years. It is also essential to know that the Lis Neris winery raises its vineyards following integrated pest management protocol without using chemical herbicides.
THE WINEMAKING
The harvest is strictly manual and only occurs when the grapes are perfectly ripe. The harvested grapes are carefully selected, and only the best bunches are taken to the cellar for winemaking. Fermentation takes place oak barrels of 500 litres; the wine then matures in the same oak barrels, on the lees for about eleven months with frequent bâtonnage. The wine is then bottled for the second fermentation (classic method) and rests on the lees for 40 months. For this classic method, the winery uses only the free-run must.
THE TASTING
Straw yellow with golden reflections. The aroma is elegant, with pleasant fruity notes alternating with floral ones. It closes with hints of custard and mineral sensations. Savoury and soft on the palate, with excellent freshness and a beautiful touch of acidity. Persistent.

Excellent as an aperitif, perfect throughout the meal with fish-based menus.
