THE WINE
The Brunello di Montalcino of the Rocca delle Macie winery is produced with 100% Sangiovese grapes grown in a hilly area on the south-east side of the municipality of Montalcino. With this wine Rocca delle Macìe adds the octave ‘DOCG’ to his wine card; this is the reason why the wine has been called “Experience Number 8”.
THE WINEMAKING
After manual harvesting, the grapes are carefully selected before being taken to the cellar for winemaking. The maceration on the skins lasts about 10-12 days and takes place in steel tanks at a controlled temperature. The wine then ages for about three years in large Slavonian oak barrels. Assembly and bottling follows, with a further period of rest of 4-6 months in the cellar before being placed on the market.
THE TASTING
Bright ruby red with garnet hues. The aroma is complex with pleasant hints of plum, ripe cherry and small red fruits that integrate well with the notes of licorice and tobacco. Intense on the palate; the tannins are well present but with a soft and sweet consistency. Great aromatic persistence.
FOOD PAIRINGS
It can be used throughout the meal if the menu is meat-based. It goes very well with red meat and game. Must try with the classic Florentine stake.
