THE WINE
This Extra Dry Sparkling Wine from the Marinig winery is a bland of Chardonnay grapes for 80% and Ribolla Gialla for 20%.
Historical company founded in 1898 in Prepotto, near the border with Slovenia. A land difficult to cultivate but rich in quality; Edi and Maurizio, the winery owners, grow the wines with a low environmental impact. The harvest is also done manually.
The winery devoted itself to the cultivation of indigenous varieties ribolla giallo, schioppettino, friulano, but also cabernet franc and merlot.
THE WINEMAKING
After the manual harvest in boxes that takes place between the end of August and the beginning of September, the selected grapes undergo a very soft pressing. The must ferments in thermo-conditioned steel tanks. The wine is then transferred into fully refrigerated stainless steel autoclaves for the second fermentation. Here it rests on selected yeasts for about 2 months. After bottling, the wine ages for another month in the cellar before being placed on the market.
THE TASTING
Bright straw yellow with fine and persistent perlage. The aroma is fresh and fragrant with pleasant hints of green apple and light puffs of pear. Harmonious on the palate. Fresh and very enjoyable
FOOD PAIRINGS
This sparkling wine is excellent as an aperitif, it goes well with fish but also with cold cuts and cheeses.
