The Wine
The Red Faye from the Pojer e Sandri winery is a bland of Cabernet Sauvignon for the 50% and Cabernet Franc, Merlot and Lagrain for the remaining 50%. The grapes are grown in area named Paradisot at 250 meters above sea level; a rather windy area thanks also to the proximity of Lake Garda.
THE WINEMAKING
After the manual harvest, only the selected grapes are brought to the cellar for winemaking. Fermentation takes place in wooden vats while aging happens in small oak barrels and lasts about 12 months. After assembly and bottling, the wine rests an additional year in the cellar before being placed on the market.
THE TASTING
Intense garnet red with violet highlights. The aroma is also intense with pleasant notes of red fruits such as raspberry, black currant and blackberry which alternate with scents of cherry and plums to close with hints of pepper and spicy puffs of pepper and cinnamon. Dry and elegant on the palate, the tannins are silky and very smooth. Complex with a persistent finish and a licorice aftertaste.
