THE WINE
The Fifty-Fifty from the Piè di Mont winery is a unique blend of 50% Chardonnay and 50% Pinot Noir grapes. What sets it apart is the location of our vineyards, nestled on the southeast-facing slopes of Mount Calvario. This unique position benefits from notable temperature variations that favor a late harvest, guaranteeing a wine with intense aroma and balanced acidity, making it truly special.
Over the years, the maturation of the vines allows the selection of small quantities of high-quality bunches intended for the production of reserves. The soil is marly.
THE WINEMAKING
The harvest begins in early September and is carried out strictly by hand, using boxes; the grapes are harvested only in the coolest hours of the day to preserve the integrity and optimal temperature of the bunches. The grapes are wine made separately in steel tanks through soft pressing. Only 5% of the Chardonnay undergoes a refinement process in new barriques. The cuvée is assembled in January, while fermentation in the bottle takes place in May. The refinement process on the yeasts has a minimum duration of 42 months, followed by further refinement in the bottle after disgorgement, which lasts approximately ten months.
THE TASTING
The colour is straw yellow, with a persistent and silky perlage. On the nose, citrus notes are distinguishable, mainly pink grapefruit and bergamot, followed by aromatic herbs and rosemary accents. It is a dry and linear wine on the palate, characterized by a marked minerality and an elegant overall harmony.
FOOD PAIRINGS
This Blanc de Blanc from Piè di Mont is perfect with fish but also pairs well with cotechino and fattier cured meats, such as lard. Try it with fried fish.
THE WINERY
The winery was founded in 1983 by Paolo Rizzi but at that time he did not produce wine but planted the vine cuttings by hand on the steep hills of this area of the Collio Friulano.
