THE WINE
The Flavio Riserva is the flagship of the Rotari winery. As the winery itself says, this Trento DOC is the most prestigious expression of Rotari’s winemaking style; the sparkling wine is produced with Chardonnay grapes grown in the vineyards owned by the winery, located in the hilly area of the Adige Valley at an altitude between 250 and 800 meters above sea level.
THE WINEMAKING
The grapes are hand-picked from the most suitable vineyards and carefully selected because only perfectly ripe grapes can be part of the Flavio cuvée. A small part of the grapes ferment in barriques to allow the wine to acquire additional woody aromas, and the rest ferment in steel. After winemaking, the wine is assembled and bottled with yeasts for the second fermentation. The choice of the bottle is not random; the particular curvature ensures that the space for yeast deposits is limited and allows for an even slower organoleptic evolution; the wine ages in the bottle on the yeasts for at least 60 months.
THE TASTING
Golden yellow with a very fine perlage; the aroma is intense and elegant with pleasant citrus notes that intertwine with fruity hints of peach and apricot to finish with puffs of walnut and honey. Very fresh, creamy and dry on the palate, this Trento DOC is an elegant and well-balanced wine with a perfect correspondence between aromas and flavours and infinite persistence.
FOOD PAIRINGS
Perfect with the entire meal if the menu is fish and shellfish based. However, you should also try it with scallops.
