THE WINE
The Francesco I Extra Brut of the Uberti winery comes from a cuvée of 75% Chardonnay, 15% Pinot Nero and 10% Pinot Bianco. It best represents the winery’s identity and what it means to be a winemaker in the Franciacorta region.
It was 1793 when Agostino Uberti became the owner of a small farmhouse and the adjoining vineyards. The farmhouse is based in Erbusco, and it is from here that the dynasty of the Uberti winery begins, one of the most historic wineries in Franciacorta. The Uberti family was also one of the first wineries to believe in bottled refermented wine which is now appreciated worldwide.
THE WINEMAKING
The grape harvest is strictly manual, and only the selected bunches are brought to the cellar for winemaking. After a light pressing, the must age in steel tanks. The wine is bottled in the spring following the harvest and left to rest on the lees for over 30 months. After disgorgement, the wine rests in the cellar for at least six months before being put on the market.
THE TASTING
Straw yellow with a fine and persistent perlage. The aroma is elegant with a characteristic bread crust aroma, alternating with hints of a broom to close with hints of yellow fruit. Savoury and slightly acidic on the palate. Persistent

Excellent as an aperitif, it goes well with fish, raw, and sushi. Try it with a savoury pie.
