THE WINE
The Cuvee Prestige of Ca ‘del Bosco is a blend of Chardonnay, Pinot Bianco and Pinot Nero grapes; grapes that grow in the heart of Franciacorta from vineyards that have an average age ranging between 19 and 27 years.
THE WINEMAKING
The manual harvest takes place in the first 20 days of August and as they are harvested, they are cooled in the cell and, before being whole pressed, they are selected by expert eyes and hands. The wne making takes place in thermo conditioned steel tanks, where the wines remain until the following March. Once the basic wines are ready, the cuvee is created.
The freshly made wines are expertly assembled with reserve wines from the best vintages (from 20 to 30%). This particular technique gives the Cuvée Prestige a distinct personality. The wine obtained rests in bottle on the lees for an average period of 25 months.
The dégorgement, which is the disgorgement, and is needed to eliminate the deposit formed in the bottle during foaming, occurs in the absence of oxygen, using a system that is unique in the world, conceived and patented by Ca’ del Bosco. This avoids oxidative shocks and further addition of sulfites. Before being placed on the market, each bottle is uniquely marked to ensure traceability.
THE TASTING
Shiny straw yellow ; the perlage is fine and persistent. The aromas shows delicate hints of fruit where apricot and banana prevail which then leave room for scents of white flowers. Very pleasant on the palate; dry, soft and aromatic with a splendid persistence.
FOOD PAIRINGS
Perfect with fish and sea food goes well also for your aperitif. Must try with sushi.
